Valentines Cake Balls





Inspired by my friend Sarah I decided to bake red velvet cake balls with drizzled white chocolate. I usually destroy most things that I bake, but this recipe was easy to follow and turned out to be very delicious!

Recipe:
Cake Balls
Recipe from Bakerella
1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (white chocolate)
wax paper
1. Make cake as directed on box and let cool once removed from oven.
2. Mix thoroughly with 1/2 can frosting
3. Roll mixture into small balls and place on cookie sheet
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave per directions on package. *
6. Drizzle melted white chocolate with spoon over the cake balls

Filo Pizza


I have recently developed a love for all things wrapped in filo dough. I love the flaky layers, so today I tried a new recipe. I created little filo pizzas. It was relatively simple using goat cheese, fresh mozzarella, tomatoes, filo dough and butter. The butter is used as glue to hold the individual filo sheets together. I used five to six layers of filo dough and then placed some cheese and tomato that was lightly salted and wrapped it all up.
I baked them for about ten minutes at 400 degrees.
And as and extra topper I added a bit of avocado for good looks and taste!

Grandma's Recipes: Part Two








Spanokopita:
It was my goal over winter break to learn some of my grandmothers famous recipes. So I spent the day at her house cooking up some of my favorite things, spanokopita and broccoli balls being two of the best.

Ingredients:
1 1/2 lbs of frozen spinach (cook and drain as given on package)
1/4 cup of fresh dill
1/2 lb feta cheese
1 tb spoon of nutmeg
dash of Parmesan cheese
several pinches of nutmeg
5-6 sheets of buttered filo dough

Bake at 350 degrees for 30 minutes (or until golden brown)

Broccoli Balls:

This recipe my grandma always serves and an appetizer when the family comes over for any occasion.


Ingredients:
1 tb spoon of olive oil
1/4 cup of chopped onions
4 mashed garlic cloves (saute with the olive oil and onions)
10 oz of frozen broccoli
1 cup of bread crumbs
1/4 of chopped walnuts
1/4 cup of Parmesan cheese
1/2 tsp of dried oregano and basil
Bake: 400 degrees for 20-30 minutes

serve with teriyaki, soy, or sweet and sour sauce

Sweet Potato & Jalapeno Burritos






This recipe puts a fun twist on the classic burrito,
which is why it has quickly become a new favorite of mine!
Ingredients:
Tortilla
Sweet Potatoes
Jalapenos
Red Onion
Sour Cream
Black or Re-fried Beans
Sour Cream
Salsa
Spinach
How To:
Bake the sweet potato, then scoop out the insides of the potato and place it on a warmed tortilla.
Then add warmed beans, and chopped jalapenos, red onions, salsa, spinach, along with a bit of sour cream to top it off.
